Refreshing summer peach salsa

Summer is coming to an end in a month (sigh). We have had an epic summer, to the point where I am secretly dreading next week. From the late night nights, long beach days, lazy routines and of course fresh and delicious produce right outside our door. I love the simplicity of summer cooking, really all you need is fresh, local ingredients like peaches. This refreshing  summer peach salsa is a perfect way to enjoy fresh summer produce.

We have been enjoying this salsa with fish tacos but you could have it on its own with tortilla chips, with grilled chicken, fish, or tofu. This refreshing peach salsa is easy to make but I would make it close to when you are serving your meal, as the peaches tend to brown. I added cucumber, corn and red pepper for extra veggies and a pop of color but you can easily substitute them for other vegetables.

Refreshing Summer Peach Salsa

  • 2 cups peaches, diced
  • 1 cup corn
  • 1/2 cup cucumber, diced
  • 1/2 cup red pepper, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juice
  • 1 tbsp honey
  • 1 pinch sea salt
  1. In a large bowl combine ingredients. Toss to combine. Place in fridge until ready to serve.

Peaches are juicy and sweet this time of the year. Did you know 1 peach contains approximately  2 grams of fibre and is a source of vitamin C, potassium, and beta carotene.
