This mango kiwi chia seed pudding is an all around winner in my books. Not only does this chia seed pudding look stunning, it tastes amazing, incredibly easy to make and is packed with nutrition. Mother’s day is right around the corner and surprise the mama in your life with this simple and delicious mango kiwi chia seed pudding.

 

Let’s talk about the health benefits of kiwi!

This green fruit has been getting a lot of attention lately and for a good reason, there are so many health benefits to eating kiwis on a daily basis. Kiwi’s are a good source of fiber, antioxidants, vitamins and minerals. Kiwi are known for their high vitamin C content. In fact, 1 kiwi provides more than one’s vitamin C daily requirement. Vitamin C is a powerful antioxidant that plays role in supporting a healthy immune system and heart.  Kiwi are also a great source of  fiber which helps keep our gut healthy. 1 cup of fiber contains 5 grams of fiber and adds bulk to help keep things moving smoothly. While most of us peel our kiwis most of the fiber is in the peel, so don’t be afraid to eat the peel after a good wash. Finally, kiwi are a great source of prebiotics which act as a food source for the good bacteria in our gut.

Ingredients

  • 2 cups coconut milk
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1/4 cup chia seeds
  • 1/2 cup of pureed mango
  • 2 kiwi, diced

Instructions

  1. In a medium bowl add coconut milk, vanilla, and maple syrup. Stir ingredients well.
  2. Add chia seeds and stir well.
  3. Place in the fridge for at least two hours or overnight. Stir at least once before leaving overnight.
  4. Place pudding in a bowl until half mark, add 2-3 tbsp pureed mango and chia seed pudding. Top with fresh chopped kiwi.
