I love summer! While there are many things I love about summer, fresh, local produce and delicious ice cream are some of my favorite summer memories. I decided to combine my love for seasonal strawberries and ice cream. This strawberry nice cream will have all your guests screaming for more, better yet they won’t even know its healthy.
I was cleaning out our freezer and had an abundance of frozen, sliced, overripe bananas. With this hot weather there is not way that I am turning on the oven and bake banana bread. I thought why not make some nice cream with some of the fresh local strawberries. Nice cream is so easy to make, its a great way to get the kids involved. We melted chocolate and added sprinkles, totally optional but adds a wow factor.
Strawberry Nice Cream (vegan, gluten free)
- 2 cups frozen banana slices
- 1 1/2 cups strawberry slices
- 1/4 cup coconut milk
- 1/4 tsp vanilla

Place all ingredients into a blender and blend until combined.
Place in a freezer dish and freeze for 3-4 hours.
Remove from freezer for 5-10 minutes
Melt chocolate with coconut oil. drizzle melted chocolate and sprinkles.
I love nice cream because it allows everyone to enjoy the taste of summer whether you are vegan, dairy free, gluten free and/or an ice cream lover like myself. The sky is the limit when it comes to adding flavors, I can’t wait to try fresh peaches, this avocado nice cream from friache nutrition looks refreshing as well.
