Let’s face it. A good, simple salad dressing can turn a good salad into a fantastic salad. You know us dietician’s want you to eat your greens. I grew up on store bought salad dressing, perhaps the reason why I disliked eating them as a teenager. Now that I discovered how delicious homemade dressings are I try to eat them daily. This dressing is nearly as fast to make as opening the fridge and shaking a bottle and pouring it over your salad. Did I mention how easy it is to make home made dressing?
We prefer vinaigrette dressings in our house. I use your standard 3 parts olive oil to one part vinegar but if you prefer a more tart dressing you can opt for a 2 parts oil ratio to one part vinegar. Add a little dijon mustard, honey, and salt and pepper. This dressing is my go to dressing but occasionally I will switch it up by adding garlic, shallot, lemon juice, or herbs such as fresh tarragon.

Ingredients
- 3 TBSP of extra virgin olive oil
- 1 TBSP white wine vinegar
- 1 tsp dijon mustard
- 1 tsp honey
- salt and pepper to taste
Instructions
- Combine all ingredients into a mason jar and shake well.
Some other dressing around the web that caught my eye is this roasted garlic and dill dressing from naturally ella and this arugula salad with grapes and black pepper vinaigrette looks incredibly delicious from pinch of yum. No excuses people, eat your greens.
