It’s been really hot here on the West Coast, too hot to turn on the oven and make my baked oats. The dietitian in me  likes to start my mornings off with a hearty and healthy breakfast packed with fibre to keep me full all morning long. Chia seed pudding is a great alternative to baked oats, mixed with seasonal local berries, like blueberries.

Health benefits of Chia Seeds:

This seeds might be small but they  are full of nutritional benefits. Did you know these little seeds are the only food to have a medical patent to control blood glucose levels, pretty cool. Chia seeds are high in fibre, protein, and anti inflammatory omega-3 fatty acids.  Chia seeds are also a good source of vitamins and minerals such as calcium, phosphorus, and maganese to help support strong healthy bones. Who ever knew a little seed could deliver such a nutrition punch.

Health benefits of blueberries:

These  sweet  berries are a favorite in our house, especially during the summer months. Blueberries offer many health benefits with one of them being antioxidant powerhouses. When it comes to antioxidant content blueberries are ranked number 1 and for good reason. Blueberries  deep blue color comes from a naturally occurring phytochemical called anthocyanin, which helps to protect us from certain caners such as colon and ovarian cancers, cardiovascular disease, diabetes, and dementia. They are  also high in soluble fiber, something most of us need to get more of. In addition to health benefits, blueberries, especially in the summer, taste amazing.
