Chocolate Strawberry PopsicleS

Happy Summer! I am so looking forward to the longer  carefree days of summer! I am sure most of you can relate .  Every year we make popsicles and this year we went with a twist and dipped them in dark chocolate topped with pistachios. These chocolate strawberry popsicles are big on flavour, incredibly easy to make, and healthy.

 

 

I love fresh summer produce,  the farmers markets are full of fresh and local produce. We have been enjoying local strawberries for a coupe of weeks and with the temperatures rising why not make popsicles.  We used fresh strawberries but if you don’t have any frozen will work. We added coconut milk for creaminess, lime juice to avoid the icy texture, maple syrup for sweetness and dark chocolate for dipping because why not.  For an added twist we sprinkled pistachios on top, you can add whatever nut you like or coconut flakes.

These popsicles are made with fresh strawberries and are naturally sweetened with maple syrup.

These chocolate strawberry popsicles are made with 6 ingredients:

  • Strawberries
  • Coconut milk
  • Lime juice
  • Maple syrup
  • Dark chocolate
  • Crushed pistachios

These popsicles are incredibly easy to make and require very little prep time, the hardest part is waiting for them to freeze.

Chocolate Strawberry Popsicles

Ingredients
  • 2 cups of strawberries, stems removed
  • 1/2 cup coconut milk, we used full fat
  • juice of 1 lime
  • 2 tbsp maple syrup
  • 1/2 cup of dark chocolate chips
  • 1/2 cup of chopped pistachios
Directions
  • Step 1 Place strawberries, coconut milk, lime juice, and maple syrup in a blender.
  • Step 2 Pour 3/4 full into popsicle mold and freeze overnight or 3 hours until frozen.
  • Step 3 Once popsicles are frozen, melt chocolate in a tall glass in microwave, add 1 tsp of coconut oil to melted chocolate.
  • Step 4 Dip popsicles in chocolate and quickly sprinkled pistachios.
