Triple berry chia seed pudding

It’s been really hot here on the West Coast, too hot to turn on the oven and make my baked oats. I like to start my mornings off with a hearty and healthy breakfast to keep me full all morning long. Chia seed pudding is a great alternative to baked oats, mixed with seasonal berries, topped with homemade granola. This triple berry chia seed pudding is easy to make, healthy and most importantly tastes delicious.

 

Healthy benefits of Chia Seeds:

This seeds might be small but they sure are full of nutritional benefits. Did you know these little seeds are the only food to have a medical patent for blood glucose control. Chia seeds are high in fibre, protein, and anti inflammatory omega-3 fatty acids.  Chia seeds are also a good source of vitamins and minerals such as calcium, phosphorus, and maganese to help support strong healthy bones. Who ever knew a little seed could deliver such a major nutrition punch.

 

Triple berry chia seed pudding

Ingredients

  • 2 cups coconut milk
  • 1/4 cup cha seed
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • 1/2 cup granola
  • 1 cup mix berries

Instructions

  1. Place coconut milk, chia seeds, vanilla, and maple syrup in a medium bowl. Using a whisk combine all ingredients. Place in fridge for 10 minutes and stir again.
  2. Place in fridge for at least 3 hours, ideally overnight.
  3. In bowls or cups place chia pudding at bottom and layer with granola and mixed berries.

What I love about this pudding is that you can add whatever seasonal fruit you like. To give this pudding a more breakfast feel I added homemade granola and topped it with fresh berries. This triple berry chia seed pudding is perfect for breakfast but also makes a great snack.
