Hello! I wanted to share this simple, delicious and easy to make chia seed pudding with lemon blueberry compote. Not only is this recipe easy to make but it’s incredibly healthy too. Make this chia seed pudding with lemon blueberry compote for breakfast, snack, or a healthy dessert.

It’s been really hot here on the West Coast, too hot to turn on the oven and make my baked oats. The dietitian in me likes to start my mornings off with a hearty and healthy breakfast packed with fibre to keep me full all morning long. Chia seed pudding is a great alternative to baked oats, mixed with seasonal local berries, like blueberries.
Ingredients
- For chia pudding:
- 2 cups of coconut milk
- 1/4 cup of chia seeds ( we used dark seeds)
- 1 tbsp maple syrup
- 1 tsp vanilla
- For compote:
- 1 cup of fresh blueberries
- 1 tsp lemon zest
- 1 tbsp maple syrup
- 1 tbsp corn starch
Instructions
- Chia seed pudding:
- Place coconut milk, chia seeds, vanilla, and maple syrup in a medium bowl. Using a whisk combine all ingredients. Place in fridge for 10 minutes and stir again.
- Place in fridge for at least 3 hours, ideally overnight.
- Compte:
- In a small pot over medium heat, bring blueberries, lemon zest, maple syrup to a boil, stir frequently. Once blueberries cook turn down heat to low and add cornstarch. Allow compote to cool
- In a small serving dish add compote to bottom, add chia seed pudding, top with fresh blueberries.

Blueberries deep blue color comes from a naturally occurring phytochemical called anthocyanin, which helps to protect us from certain caners such as colon and ovarian cancers, cardiovascular disease, diabetes, and dementia. They are also high in soluble fiber, something most of us need to get more of. In addition to health benefits, blueberries, especially in the summer, taste amazing.
