Sometimes the simplest recipes are the best, like this summer tomato salad made with fresh tomatoes, herbs, topped with olive oil and balsamic oil. I can’t think of a better my way through the rest of my tomatoes. This simple summer tomato salad is so fresh and flavourful I could eat it every day through September.
As we are inching closer to the fall, I am planning on enjoying every last second of the summer.This summer tomato salad is a perfect salad for any BBQ. Is there really any other way to celebrate summer than eating fresh produce such as tomatoes at their peak. My garden produced hundreds of cherry tomatoes, I love walking by the garden and popping a few in my mouth.This summer tomato salad is super simple to make and is bursting with flavour. Your guests will be talking about this salad for days to come.
Ingredients
- 6 heriloom toatoes, sliced
- 3 cups of cherry tomatoes ( I used a combination of sungold and cherry)
- 1/2 cup mini bocochini
- 1/2 cup chopped basil
- 1/4 cup of olive oil
- 1 TBSP balsamic vinegar
- Salt and pepper to taste
Instructions
- Place heriloom tomatoes on serving platter. Add cherry tomatoes.
- Place bocochini throughout platter.
- Add fresh basil
- In a small bowl combine olive and vinegar. Sprinkle over salad.
- Add salt and pepper to taste.
