Citrus Loaf

I love citrus. This citrus loaf is perfect for spring, it’s so fresh with a burst of orange. I added a light glaze but you could always leave it as is. This loaf is delicious and leaves your house smelling divine.

This citrus loaf is slightly sweet with fresh, subtle citrus flavour from  orange zest. In this recipe, I used greek yogurt which added extra moisture and protein.  This loaf would make a perfect addition to Easter brunch and/or snack with a cup of tea. Every time I make this citrus loaf it disappears within days.

Ingredients

  • 1 large orange, zest and juice.
  • 3 large eggs, room temperature
  • 3/4 cup of sugar
  • 2/3 cup of olive oil
  • 3/4 cup plain yogurt
  • 1 tsp vanilla extract.
  • 2 cups of all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/8 tsp salt
  • Icing sugar:
  • 1/2 cup of icing sugar
  • 1 tbsp lemon juice
  • 1 tbsp orange juice
  • zest of orange

Instructions

  1. Preheat oven to 350 degrees. Grease loaf pan and line with parchment paper.
  2. In a large bowl, add sugar, lemon and orange zest. massage the zest into the sugar. Add eggs one at a time and beat until light and fluffy. Add oil, yogurt, lemon and orange juice.,and vanilla extract . Mix to combine. Scrap the sides of the bowl with a
  3. spatula.
  4. In a medium bowl, combine flour, baking soda, baking powder and salt. Add dry ingredients to wet. Combine but do not over mix. Add to loaf pan ad bake for 45-50 minutes. Check for doneness with a toothpick when it comes out dry.
  5. Allow loaf to cool completely before icing.
  6. In a small bowl, whisk together powder sugar, lemon, orange juice and zest.
  7. Drizzle over a completely cooled loaf.
