Good Morning Friends! We have an amazing breakfast recipe to start off your Monday on the right foot. Orange citrus chia seed pudding. We love Chia seed pudding. I mean what’s not to love… its super easy to make, tastes amazing and is super healthy. We are loving orange season and thought this orange citrus chia seed pudding would make a perfect breakfast.

As a registered dietitian, I am always looking for healthy breakfast ideas to keep us going all morning long. Did you know that 2 tbsp of chia seeds provide 11 grams of fibre, 4 grams of protein and 5 grams of healthy essential fats. Most people think of chia seed pudding as breakfast but this orange citrus chia seed pudding is so refreshing that you could really eat it any time of the day. I sometimes pack it for the girls school lunches.

Orange Citrus Chia Seed Pudding

 

  • 2 cups coconut milk
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tbsp orange zest
  • 1/4 cup chia seeds
  • 1 handful toasted coconut flakes
  • 1 orange, sliced
  1. In a medium bowl add coconut milk, vanilla, and maple syrup. Stir ingredients well.

    Add orange zest and chia seeds and stir well. 

    Place in the fridge for at least two hours or overnight. Stir at least once before leaving overnight.

    Toast coconut flakes until lightly brown.

    Place pudding in a bowl or cu and top with fresh orange slices and toasted coconut.

 

 

This orange citrus chia seed pudding is easy peasy to make, takes 5 minutes to prepare and requires no cooking. Oh, did I mention minimal dishes to clean.  The orange slices and zest make this orange citrus chia seed pudding a refreshing breakfast, snack or dessert for those cold glumy winter days. Let’s just hope the ground hog was right and spring is around the corner.
