Hello my friends!  As we transition to warmer and longer  spring days ,I find myself craving lighter meals made with simple and fresh ingredients. These tropical fruit chia seed cups are made with fresh , juicy mango, pineapple, coconut and protein packed chia seeds.. These tropical fruit chia cups are refreshing , delicious and easy to make.

 

 

This recipe is inspired from a recent trip to Hawaii where we enjoyed a variety of  fresh, local tropical fruits. This tropical fruit chia seed cup is perfect for breakfast , snack or healthy dessert. One thing I love about this chia seed pudding is that it is so versatile, if pineapple and mango are not your thing simple swap it out for berries or any fruit of your choice.

 

 

Chia  seeds might be small but they sure are full of nutritional benefits. Did you know these little seeds are the only food to have a medical patent for blood glucose control. The dietitian in me loves that they are high in fibre, protein, and anti inflammatory omega-3 fatty acids. For all you protein lovers 2 tbsp of Chia seeds provides just under 5 grams of protein. They are also a good source of vitamins and minerals such as calcium, phosphorus, and maganese to help support strong healthy bones. Who ever knew a little seed could deliver such a major nutrition punch.

 

 

Tropical Fruit Chia seed cups.

Ingredients

  • 2 cups of coconut milk
  • 1 TBSP maple syrup
  • 1 tsp vanilla
  • 1/2 cup of chia seeds
  • 1/2 cup of pineapple, puree
  • 1/2 cup of mango puree
  • 1/2 cup chopped pineapple and mango
  • 1/4 cup of toasted coconut

Instructions

  1. In a medium bowl add coconut milk, vanilla, and maple syrup. Stir ingredients well and place in the fridge for at least 4 hours, ideally overnight.
  2. Stir at least once before leaving overnight.
  3. Puree pineapple and mango in a blender
  4. Toast coconut flakes until lightly brown.
  5. To assemble:
  6. Please pureed pineapple and mango at bottom of cup, add chia seed pudding, and top with fresh pineapple and mango chunks. Sprinkle coconut flakes on top.
