Happy Fall! Its been awhile since I have been on here. Life has been pretty crazy since the girls started school. I am sure many parents can relate. Anyways, here we are, it’s October and we are in the full swing of school and activities. If your kids are anything like mine, you know after school snacks are a big deal for them and myself. Besides taste, these peanut butter energy balls are super easy to make and healthy.

 

 

These peanut butter energy balls are perfect for after school snacks, soccer games, and/or a quick and healthy convenient snack. These energy balls are packed with protein, healthy fats and fibre to stay full and satisfied. These energy balls pack a punch in the health department without compromising taste.

Ingredients

  • 1 1/2 cups of oats
  • 3/4 cup peanut butter
  • 1/4 cup of shredded coconut
  • 1/4 cup of maple syrup
  • 1/4 cup chocolate chips
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts
  • 1 tsp vanilla

Instructions

  1. In a large bowl combine all ingredients. Roll into balls and refrigerate.

All the ingredients for these energy balls are easy to find in the grocery store and/or pantry and the ingredients are easily interchangeable if you want to make substitutions.  For example, you could easily add nuts, dried fruit, and/ or ground fruit. With no baking required and only 1 bowl, clean up is easy. Really these balls seem to good to be true and you should make them.
