Happy Spring! It might not feel like spring here on the West Coast but I am ready to transition into fresh salads! Speaking of fresh salads I found local asparagus at our local grocery store this week. This asparagus spring green salad with wheat berries is a perfect way to say good bye to comfort foods and hello to fresh spring salads. This salad is fresh, delicious and would make a perfect addition to your Easter dinner.

Asparagus is my favorite spring vegetables. In this salad, the asparagus is sauteed in olive oil, salt and pepper followed with a squeeze of fresh lemon. So good. Asparagus is packed with nutrients including fiber, folate , vitamins A,C and K as well as potassium, a mineral that plays a role in regulating blood pressure.

To make this spring green salad hearty I added wheat berries. Wheat berries are unprocessed wheat kernals that contain all three parts of a grain: the germ, bran, and endosperm. Wheat berries are high in fiber, protein as well as vitamins and minerals manganeese. phosphorus, selenium, and magnesium. Wheat berries are a great way to make your salads hearty and satisfying.

 

Asparagus Spring Green Salad with wheat berries

Ingredients

  • Salad
  • 3 cups of spinach, washed
  • 1 cup of arugula,washed
  • 1 bunch of asparagus, washed and ends chopped
  • 1 cup wheat berries, cooked to directions on box
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted sesame seeds
  • juice of lemon
  • Salad dressing
  • 1 garlic clove, minced
  • 2 tsp dijon mustard
  • 3 teaspoons, of white wine vinegar
  • 1 tablespoon honey
  • 3/4 cup olive oil
  • salt and pepper

Instructions

  1. Cook wheat berries according to directions
  2. Heat pan over medium heat and saute asparagus for 2-3 minutes. Season with salt and pepper. Once asparagus is cooked squeeze fresh lemon juice on top.
  3. In a large bowl, combine spinach, arugula, wheat berries, asparagus, and feta cheese.
  4. For salad dressing:
  5. In a jar, add garlic, dijon mustard, white wine vinegar, honey. Shake to mix well. Add olive oil and mix again. Season with salt and pepper.
  6. Toss salad with dressing and enjoy!
