Tis the season! The girls are on winter break , like many parents keeping, them entertained and off technology can be challenging.  We have the perfect activity to keep those little minds busy. Last weekend, the girls and I rolled up our sleeves and made some delicious, cute gingerbread cookies. I love baking Christmas cookies with the girls, even if it takes longer to bake and the kitchen is a mess.  These gingerbread man cookies are fun to make, delicious and will leave your house smelling amazing. If your looking for a kid friendly activity, we suggest you bake some of these delicious gingerbread cookies.

Ingredients

  • 1/2 cup of butter, room temperature
  • 1/2 cup of brown sugar
  • 1/2 cup of fancy molasses
  • 1 egg, room temperature
  • 3 1/2 cups of all purpose flour
  • 1 tbsp. cinnamon
  • 1 tbsp ground ginger
  • 1 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • For icing
  • 1 cup of powdered icing sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla
  • candied christmas m&m's and christmas sprinkles

Instructions

  1. In a large mixing bowl, beat butter and sugar together until fluffy, approximately 3 minutes. Add molasses and beat again. Add egg and beat again. Using a spatula wipe down sides of the bowl.
  2. In a medium bowl, whisk together flour, spices, baking soda, and salt.
  3. Add dry ingredients to the wet ingredients and combine.
  4. Divide dough into two sections and wrap in plastic wrap and place in fridge for 24 hours.
  5. Preheat oven to 350 degrees and line baking sheet with parchment paper.
  6. Roll out dough evenly on a lightly floured counter to a 1/8 thickness and cut out into desired shapes.
  7. Bake cookies for 8 minutes and let them cool completely on a wire cookie rack. If you prefer a crispy cookie bake for 10 minutes.
  8. While cookies are cooling, whisk together icing and place in a ziplock bag or plastic bottle. Decorate as you desired using icing, candies, and sprinkles. Store in an airtight container for 4 days.
