Moist Dark Chocolate Beet Brownies

The other day I was asked if I had a weakness? I didn’t have to hesitate…. Chocolate.  My love for chocolate has grown with two pregnancies. Luckily for me, my preference for dark chocolate has grown as well. I saw a beet brownie recipe in Home and Style Magazine and was intrigued. After a few trials, these moist dark chocolate beet brownies turned deliciously rich, the kind where you only need a small piece to satisfy your sweet tooth.

My eating philosophy is simple, eat good food, mainly homemade with quality ingredients, without deprivation. I strive for a 80/20 balance, 80 % of the time I eat well, mostly plant based.  I do not believe in sneaking vegetables into my kids food or believe that by adding vegetables you can turn a dessert into something healthy. This is the first time I have made a dessert with vegetables. To be honest I was curious and have a ton of beets in my garden.  By no means will this beet brownie recipe get the       ” healthy” label from me, there is still a significant amount of sugar in it. But hey we don’t just eat to nourish our bodies. We also eat for pleasure, just try to aim for no more than 20% of the time.

Moist Dark Chocolate Beet Brownies

Ingredients

  • 1/4 cup unsalted butter, melted
  • 1/2 cup of sugar
  • 1/2 cup of cocoa
  • pinch of salt
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup all purpose flour
  • 50 grams of dark chocolate ( I used organic)
  • 2 medium red beets, washed, peeled, grated into fine pieces
  • 1/4 cup toasted walnut pieces

Instructions

  1. Preheat oven to 350 degrees
  2. line 8x8 pan with parchment paper
  3. Melt butter in microwave or over stovetop
  4. Using an electric mixer, beat butter and sugar together. Add cocoa and salt. Mix until combined.
  5. Add eggs, one at a time. beat. Add vanilla and beat until combined
  6. Add flour and stir until well combined
  7. Melt chocolate over the stove top, using double boiler
  8. While chocolate is melting. Add beats to food processor and pulse into small, fine pieces.
  9. Add chocolate, beets, and walnuts. Stir until well combined
  10. Bake for 30 minutes. check for doneness by inserting a toothpick into centre of brownie, if it comes out clean your brownies are done

Beets are one of my favorite vegetables. Naturally sweet, beets are a good source of iron, folic acid, and fibre. This beet quinoa salad with carrots is a family favorite and makes a regular appearance on our weekly menu plan.
