Dark Chocolate Peanut Butter Cups

Are you a sweet or salty person? I am definitely a sweet person. I blame my sweet tooth on pregnancy cravings with my first daughter. I love a piece of good quality chocolate every now and then. These dark chocolate peanut butter cups are absolutely delicious and oh so addicting. Add a little salt and you have a perfect balance of sweet and salty.

These dark chocolate peanut butter cups were inspired by a fellow dietitian at a recent work luncheon. They were so good I just had to make my own version. Did I mention they are easy to make with no baking required, perfect considering the hot summer days we have been having lately.

I am sure the vision of a dietitian’s lunch conjures images of kale salads galore. Their definitely was an abundance of vegetables. But believe it or not dietitian’s enjoy a little indulgence too. My eating philosophy is pretty simple, eat well 80 % of the time and 20% of the time treat myself to a little indulgence. To help stick to this rule we make our own desserts that way I have control over the ingredients and portion size, hence mini muffin liners were used. Store bought desserts like cookies, cakes, pastries and or donuts are full of long lists of ingredients. Plus, homemade desserts seem much more satisfying.

I used a high quality 70% dark chocolate. For a little crunch, I added brown rice crips. You can omit the rice crips altogether if you like. Finally, I played around with different toppings and added a little coconut and salt for a sweet and salty taste. These chocolate peanut butter cups are a perfect dessert or treat.

Dark Chocolate Peanut Butter Cups

Ingredients

  • 35 grams of good quality dark chocolate ( I used 70 %)
  • 1/4 cups of smooth peanut butter
  • 2 tbsp brown rice crisps
  • 1 tbsp honey
  • 1 tsp powder sugar

Instructions

  1. Using a double boiler melt chocolate over medium heat
  2. Place mini muffin liners in muffin tin
  3. In a medium bowl combine peanut butter, honey and powder sugar.
  4. Place 1 tsp of melted chocolate in each muffin liner, you may have to tilt to get an even chocolate distribution
  5. Add brown rice crips to each muffin liner
  6. Add peanut butter mixture size of a quarter to each liner
  7. Add melted chocolate to each muffin liner
  8. place in fridge for 30-45 minutes

Notes

Add little coconut or salt to the tops before placing in the fridge or simply leave them plain.
