I can’t believe it’s days before Christmas! Where did December go? I made these gingerbread waffles a few weeks ago and had the intention of getting them up earlier. If you like gingerbread,  you are going to love these gingerbread waffles. These gingerbread waffles are incredibly easy to make, delicious and did I mention they will leave your house smelling amazing. Heck we might even leave these out for Santa and his crew instead of cookies! What do you think?

 

These waffles are warm and comforting, something we could all use these days. Not only are they delicious, they are also easy to make. I like to make extra and and freeze them. To give these gingerbread waffles a nutritional boost I used wholewheat flour and added hemp hearts. You can buy a gingerbread spice or make your own, which is a combination of cinnamon, ginger, nutmeg and cloves. Fraiche living has a recipe on her blog if you are looking for your own. We topped these with plain yogurt and pomegrante seeds. Sometimes we add a coconut whip to our waffles and or pancakes.

Gingerbread Waffles

  • 1 1/2 cups whole wheat flour
  • 1/4 cup hemp hearts
  • 2 tbsp brown sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 2 tbsp butter,melted
  • 1 1/4 cups milk
  • 1/2 cup molasses
  • 1 egg, beaten
  1. Preheat waffle iron.

    In a large bowl, whisk all dry ingredients together.

    In a medium bowl, add butter, molasses, egg, and milk.

    Add wet ingredients to dry ingredients.

    Scoop 1/3 cup batter into each mold and cook until golden brown.
