Watermelon is one of the most loved summer fruits. We are big watermelon fans and enjoy it  as a snack as this evidence suggests with this refreshing watermelon and feta salad, and in this watermelon, strawberry and banana smoothie. There is no better way to beat the heat on hot summer days than a tasty refreshing watermelon and cucumber popsicle. Most popsicles have a lot of added sugar and not much flavour in comparison to homemade popsicles where herbs such as mint can be added for additional flavour. These tasty popsicles contain no added sugar, which makes this dietitian mama happy.  These refreshing watermelon and cucumber popsicles are healthy, refreshing and will quench your thirst on a hot summer day.

My girls are super excited about these popsicles. With 4 simple ingredients these popsicles take a quick minute to make, the hardest part is having patience to wait for them to freeze, but they are worth the wait. I decided not to add sugar because watermelon is sweet enough on its own  plus I added a handful of mint along with fresh lime juice. Freezing does subdue watermelon’s  sweetness. If you prefer a sweeter popsicle I recommend adding 1-2 TBSP of honey or sugar.

Watermelon is a perfect summer fruit, it is super hydrating, containing over 90 percent water.  watermelon is also an excellent source of lycopene. Lycopene is a powerful antioxidant which plays a role in cancer prevention and cardiovascular health. Cucumbers add quite a nutrition punch to these popsicles, like watermelon, cucumbers are super hydrating, contain insoluble fiber and have anti-inflammatory properties for cardiovascular prevention, anti-aging and neurological impairment.

Unsweetened Watermelon Popsicles

Ingredients

  • 3 cups of watermelon, seedless
  • 1/2 cucumber, washed and chopped
  • 1 handful of mint
  • juice from 1/2 lime

Instructions

  1. Place all ingredients into a blender and blend until pureed
  2. Add to popsicle moulds and freeze

Notes

once watermelon freezes the sweetness will be subdued. If you prefer a little more sweetness I would add 1-2 TBSP of honey or sugar.
