Apple And Pear Baked Oatmeal

If you have been following me you know I am a breakfast lover. I love starting my day with a healthy, hearty breakfast.  I like to wake up an hour before everyone else so that I can sit and enjoy my breakfast before the morning chaos starts. Lately, I have been making baked oatmeal topped with plain yogurt. D and the girls love it. I will make a batch on the weekend which will carry us through the week, leaving me more time to plan school lunches.  I love this apple and pear baked oatmeal because it is full of fibre, contains no refined sugars, uses seasonal apples and pears, and tastes amazing. I love knowing that I am sending Miss E to school with a healthy breakfast.  This baked apple and pear oatmeal is a perfect breakfast to help nourish your kids bellies and minds.

With Miss E starting school I do worry that she will get hungry and won’t be able to focus on school tasks.  Research shows that kids who eat a healthy well balanced breakfast have better attention spans, more energy, are less irritable, and perform better academically. A well balanced breakfast should include a healthy protein, fruit and or vegetable, and whole grains to keep their bellies and minds full. Most cold breakfast cereals are full of refined sugars that don’t provide kids with proper nutrients they need to be successful in school.

This baked apple and pear oatmeal makes a perfect breakfast for back to school. This oatmeal is packed fibre to help kids stay focused all morning until recess or lunch. Add a spoon of plain yogurt and you have a perfectly well balanced delicious breakfast. Baked Apple & Pear Oatmeal

Ingredients

  • 4 gala apples, chopped with peeling
  • 2 barlet pears, chopped with peel
  • 1/4 cup of walnuts, chopped
  • 1/4 cup of pumpkin seeds
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 2 cups of oats
  • 2 tbsp of coconut oil, melted
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 11/2 cups of milk ( cow's, unsweetened almond, or coconut)
  • 1 tbsp maple syrup
  • 1 egg, large
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375degrees
  2. In a large sauce pan over medium heat melt coconut oil
  3. Add apples, pears, walnuts, pumpkin seeds cinnamon, and ginger. Cook until soften (7 minutes)
  4. Melt coconut oil and toast oats for 2-3 minutes
  5. In a medium bowl In a medium bowl, combine oats, cinnamon and baking powder
  6. In a small bowl combine milk, remaining coconut oil,egg,maple syrup and vanilla.
  7. Layer 1/2 the fruit on the bottom of the baking dish, add oats, and wet ingredients.Gently wiggle to baking dish to ensure the milk is evenly distributed.
  8. Bake until lightly brown. Let cool for 5 mins before serving
  9. Top with yogurt
