Summer has finally arrived here on the West Coast! It’s been pretty hot the past couple of weeks. To beat the heat we have been making vanilla peach popsicles. I love the sweet taste of a juicy Okangan peach. We are so lucky here on the West coast to have an abundance of seasonal fruit and vegetables at our finger tips. As a dietitian mom, I am always looking for a healthier option when it comes to feeding the girls. These creamy vanilla peach popsicles are made with fresh seasonal peaches, taste amazing, super easy to make and are a perfect summer treat on a hot day.
Vanilla Peach Popsicle
Ingredients
- 2 cups peaches, fresh or frozen
- 1 tbsp honey or maple syrup
- 1 lime juice
- 1/2 cup vanilla yogurt
- 1/2 cup greek yogurt
Instructions
- Blend peaches, honey and lime juice.Fill popsicle mould 1/2 full and place in freezer for 15 minutes.Combine vanilla and plain yogurt. Mix well.Add yogurt to the popsicle mould and top with granola. Freeze for 4 hours.
