Gluten and Dairy Free Brownies

These gluten and dairy free brownies are simply amazing. I made these brownies last week for my daughters first communion celebration and they were a hit.  These gluten and dairy free brownies are rich and chocolatey to the point that you only need a small square to satisfy a sweet tooth. Perfect on their own but can be served with a scoop of vanilla ice cream and fresh berries.

 

Gluten and dairy free brownies

Cook Time 25 minutes

Ingredients
  

  • 1/2 cup coconut oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs, well beaten
  • 1/2 cup gluten free all purpose flour
  • 1/2 cup cocoa
  • 1/4 cup dark chocolate chips
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup unsweetened shredded coconut

Notes

Preheat oven to 350 degrees.
Grease an 8 x  8 baking dish with parchment paper.
In a bowl whisk flour, baking powder, and salt together.  Set aside.
In a medium pot, combine coconut oil, both sugars, and cocoa 
In a large bowl, beat eggs (well), add vanilla and beat again. Add melted chocolate mixture and beat again. Add dry ingredients and mix until combined. 
With a spatula pour into baking sheet and sprinkle chocolate chips and coconut on top.
Bake for 20-25 minutes until brownies have set. Remove from oven and allow brownies to cool on cooling rack.

I made these brownies with gluten free all purpose flour because a couple of guests have celiac disease but you could easily substitute all purpose flour. You could also add toasted walnuts and serve vanilla ice cream on the side. Now I am totally fine with a little indulgence here and there but if you prefer a brownie that is a little less sweet I suggest these beet brownies or these black bean brownies from fraiche nutrition look divine.

While these brownies require a extra prep time, its totally worth it. Why not treat mom Mother’s day with these amazing gluten and dairy free brownies. I mean what mom doesn’t love chocolate.

    These were absolutely delicious! Just made them for my Cousins they even said “Wow! These are So Yummy!” That’s the closest thing I’ve tasted to a real brownie since being dairy and gluten free-thank you! your Recipe made it easy.

    This is fairly easy to make. We are also egg free. I used egg replacer and a tsp. of Nutritional yeast. A full tsp. of baking powder. Baking without eggs can be tricky. I also used coconut sugar on top. Kids can be finicky. It would be helpful, to include egg free recipes. The Brownies came out great! Thanks
